  • Basic piping drills on cupcakes to build control and consistency

  • Intro to ingredient selection, oven management and troubleshooting

  • Simple costing demo: how to calculate ingredient cost per cake

Day 2 — Structure, Piping & Decoration (Hands-On)

  • We start the day with focused piping skills — before anything else — to master tips, pressure control and common piping patterns (borders, rosettes, shells, ruffles)

  • Ice, fill and crumb-coat your cakes; level and ganache for a perfect finish

  • Advance to decorative elements: create multiple showpieces and one detailed figurine

  • Practice assembly techniques so your decorations are secure and professional

Day 3 — Assembly, Styling & Selling (Hands-On + Business)

  • Final assembly and full decoration of your showcase cake (use the techniques you've practised)

  • Hands-on styling and product photography: composition, simple lighting, phone camera tips and quick editing for social platforms

  • Short marketing session: writing captions, choosing hashtags, packaging & presentation for retail or delivery

  • Final costing exercise: produce a sample worksheet showing profit margins and suggested retail prices
